3 c. jumbo yams
1/2 c. sugar
1/2 tsp. salt
2 eggs, beaten
1 cube margarine, melted
1/2 can evaporated milk
1/2 tsp. vanilla
topping:
1/2 c. flour
1 c. brown sugar
1 c. chopped pecans
1/3 c. melted margarine
pinch of salt
directions:
Boil the yams (do not peel first - the peels fall off easily after boiled, but you can half or quarter them to get them to fit in your pan) takes about 30 minutes to an hour. Then drain them, peel off and discard skins, and mash the yams.
Add all the other main ingredients in with the yams, stir together, and then pour into an 8.5x11 pan. Mix topping ingredients together in a separate bowl until crumbly and sprinkle on top. Bake at 350 for 30 minutes or until yams are no longer sloshy and topping is crispy.
