Tzatziki Sauce

1 cucumber, peeled, seeded and finely grated
1 cup plain Greek yogurt
1 tablespoon olive oil
1/2 tsp dill
1 tsp vinegar
1 garlic clove, minced
1/4 teaspoon salt
Dash of pepper

Working with one big handful at a time, squeeze the moisture out of the cucumber. Add remaining ingredients and stir to blend. Possibly add a bit more salt to taste. Chill at least 15 minutes before serving.

This recipe makes enough for our family to use for 4-6 gyro sandwiches.
