Roasted Brussel sprouts

2 pounds fresh brussels sprouts
1/2 pound bacon, chopped into small pieces
1 teaspoon salt, plus extra
pepper

Preheat oven to 400°. Cook bacon in a pan until done, but not too crisp. Remove bacon pieces and set aside, but reserve grease.

Cut off the brown ends of the Brussels sprouts and pull off any yellow outer leaves. Mix them in a bowl with the bacon grease, salt and a pinch of pepper. 

Pour on a sheet pan and roast for 35 to 40 minutes, until brown on edges. Mix with bacon pieces, sprinkle  with a bit more salt and serve immediately.
